While it is suggested to meal prep over the weekend, what happens when the week gets away from you?
It’s a meal preppin’ Monday or Tuesday or ...after the weekend chaos…
Sloppy Joe bowls:
-Sliced sweet potatoes roasted with an olive oil, smoked paprika & sea salt drizzle for 15 minutes at 415.
-2 lb ground turkey, 2 tbsp minced garlic, yellow onion chopped, bell pepper chopped, 1 tbsp Dijon mustard, 1 tbsp regular mustard, 1/2 cup no sugar added ketchup, 2 tbsp coconut aminos, 1/4 cup organic tomato paste, 2 tsps chili powder, 1 tsp sea salt, 1/2 tsp fresh ground black pepper.
-Drizzle large pan with olive oil and sauté garlic until fragrant. Add onion & bell pepper and sauté until soft. Add ground turkey and cook until browned. Add the rest of the ingredients and stir until heated through.
-Serve with greens, quick pickled onions, pickles etc…
Quick pickled onions:
Thinly slice a red onion. Add one tsp coconut sugar, 1 tsp salt and 1/2 cup apple cider vinegar to a mason jar and let sit for several hours.
Easy Kale, sausage egg bake:
-Preheat oven to 350.
-Whisk together 8 eggs, 1/2 cup low-fat cottage cheese, pinch salt, pepper and handfuls of chopped kale.
-Sprinkle with fresh grated Parmesan and I used some leftover sausage I had browned.
-Bake 350 for 30 minutes in greased pie dish.
